Foodie Friday #8 – Summer Berries Sponge Cake

We have been longing for the summer in the DaisLikeThese household and seeing as the weather outside isn’t helping us at all, I thought we could bring summer to us with this yummy berry sponge cake recipe.

My cheeky 5 year old was not interested in helping today but my biggest boy hasn’t grown out of baking yet and was a willing assistant.

You will need:

  • 125g caster sugar (plus a bit extra for sprinkling)
  • 125g butter, softened
  • 125g self raising flower
  • 2 medium eggs
  • frozen berries – enough to cover the bottom of a baking tin

Preheat the oven to 180c.

To make the sponge, cream the butter and sugar together until it is combined. Beat in the eggs – we used an electric whisk. Fold in the flour. If the mixture is too thick, add a drop of milk.

Next spread your mixed berries over the base of a cake tin or silicone cake mould and sprinkle over some caster sugar. Then spoon your sponge mixture on top of your berries.

Bake for 20-25 mins (until a skewer comes out clean) and TAH DAH:

I love how simple this recipe is; I normally have a pack of berries in the freezer and the rest is just stock cupboard stuff. I’m pretty sure it would work well with other fruits.

It tastes sooooo good too!

    This looks delicious and amazingly simple too! Plus I have a freezer full of frozen fruit at the moment! (it was definitely meant to be :p ) as the last linker at #YumTum this week you may not get two comments so I have also stumbled your post as well 🙂 hope to see you again next week 🙂
