Foodie Friday #5 – Valentine’s Heart Cupcakes

This week we have gone with the Valentine’s Day theme for our weekly cooking session. I was one helper down as my eldest was heading to the school disco (eeeek!) but my 4yr old was a willing helper and taster!

We created these brilliant heart shaped cupcakes using the magic of…wait for it…marbles!!

You will need:

  • 110g Caster Sugar
  • 110g Self raising flour
  • 110g unsalted butter
  • 2 eggs
  • 1 teaspoon vanilla extract
  • (and a few drops of milk if you need to thin your mixture at all)

Preheat your oven to 200c.
First we added the sugar to the butter in a bowl and blended it together using out fingers.

We then added the eggs and mixed everything together using an electric whisk. When this was done we gently folded in the flour and finally added the vanilla essence. Our mixture was fine at this point, but if it is ever too thick I add a few drops of milk to thin it slightly.

Next we added cake cases to a muffin tray, filled each one half way and then gently placed a marble between the cake case and the edge of the tin, like so:

We popped the cakes in the oven for 12 minutes.

When they came out they had risen well so I carefully sliced the tops to flatten them out for decorating:

Normally I would make my own buttercream icing but because I had the pressure of getting to and from a school disco drop off, we used a pre-made and it worked perfectly well. You could have so much fun decorating these but we went pretty uniform.

This recipe is my go-to cupcake mixture so for me it was great to be able to create something a little bit different so easily – who knew how handy a marble could be when baking?!
